Thanks John, your answer was what I suspected he was building.

You are also correct, grist mills make cornmeal, much coarser than flour.

There are a lot of those old pioneer grist mills here in the States. If one tries
to grind flour or flour consistancy with them, running the stones (one moving, one
stationary) that tight causes either rock chips in the flour, scorched flour from the
friction generated, or worst case the flour dust catching fire.

Your historical knowledge of the type of mills he had built (flour) has been most helpful.
